Zucchini


I love this time of the year. Fresh young vegetables, yummy baby red potatoes, baby carrots a plenty.

I saw young squash and zucchini in the market this morning and had to get some. I was grilling up some chicken and knew that with the 70 degree weather we deserved a little taste of summer.

I make zucchini a lot of different ways but the easiest way to do it is to grill it. Wash and dry the zucchini, slice into bite sized pieces or cubes. Place a good sized strip of aluminum foil down on the counter to put the vegetables into the foil.

Salt and pepper the zucchini to taste and add some onion powder if your interested. You can also add onion slices or tomatoes. Add about a 1/2 tsp of butter spread and seal it up tight and throw on the grill.

That's it. Cook for 8-10 minutes or until you hear 'boiling'. Then either open and add cheese (soy, vegan, or dairy depending on what you can have my kids love Colby jack but mine are just grilled no cheese) or leave plain and enjoy. Let them cool a good 2-5 minutes as they will be VERY hot.
