Asian inspired Chicken Salad

This is a dish I make a lot. I marinade chicken in the afternoon with:

1/2 Cup of Tamari (wheat free soy sauce)
2 TBSP of Brown sugar
1 TBSP of Lemon juice
1 crushed garlic clove
1 tsp of crushed red pepper flakes or 1 tsp of chili garlic sauce
1/2 Cup of water

Marinade chicken tenderloins or 2 chicken breasts in the marinade for up to four hours.

Grill and slice up chicken into bite size pieces. Place over spinach leaves with mandarin oranges, cran-raisins, almonds, black olives and Fresh Gourmet Tortilla strips.

I eat this about twice a week and it's very filling.
